2008 Calcari Xarel -lo Pares Balta
Pares Balta has been cultivating vineyards in the Penedes region of Spain in a sustainable way since 1790. In 2004, they finally got around to applying for organic certification! The winery has its own flock of sheep to fertilise the soil and beehives to encourage pollination. Unusual for Spain, the two winemakers are both female, which could explain why wines produced at Pares Balta have an undeniable charm and purity to them.
The 2008 Calcari (the name comes from the soil type in which the grapes are planted) is made from an indigenous grape variety called Xarel-lo (you may have come across it in a bottle of Cava). The wine is unlike other whites you may be used to; it offers up a nose of liquorice, white flowers, mineral, green apple and citrus. Refreshing and zesty on the palate, nice and dry. Dynamite when served with oysters and cold seafood.
$17.95/bottle (12 pk.)

2008 Primitivo “SUD” San Marzano Puglia
A Profile favourite that’s simply great value. The “Sud” delivers an over the top effort that jumps from the glass with aromas of abundant ripe black fruit, grilled meat, rosemary, vanilla and pepper. Big textures on the palate not unlike an Amarone. Best served with a little hard cheese and good Prosciutto.

Cristom Vineyards Pinot Noir Offering
Arguably one of the top Pinot noir winemakers in the USA, Cristom’s humble winemaker, Steve Doerner, has had two jobs in his life. No.1, pizza delivery boy while in high school and No.2, making Pinot Noir. He started at the trailblazing winery Calera back in the eighties with Josh Jensen. Now at Cristom, he has quietly gone about producing some of the new world’s best Pinots.
We have small allocations of these single vineyard offerings in both full and half bottles.

2006 Cristom Marjorie Vineyard Pinot Noir
Planted in the early 80’s, the old vine character is coming through. Complex spice notes, red and black fruits and a concentrated sweetness on the palate. It has good structure but needs a few years to fully develop and should drink well for the next decade. 91 points Parker.

2006 Cristom Louise Vineyard Pinot Noir. (Half Bottle)
The Louise vineyard has a superb bouquet of pain grille, mineral, cranberry, cherry, and rose petals. Layered and plush on the palate, it has loads of savoury fruit, complex flavours, and a silky smooth finish with great length. Give it 3 years in the cellar and drink it from 2012 – 2020...if you have the patience.
$32.95/bottle (12 pk. in the half bottles)

2007 Cristom Mt Jefferson Pinot Noir (Half bottle)
The Mt Jeff cuvee has a cinnamon scented nose that is reminiscent of a village level Burgundy. It shows the elegant style of the 07 vintage with cran-raspberry and higher tone red fruit notes on the palate. In typical Mt Jefferson style, the wine will gain some meat-on-the-bones in the short term. Winemaker Steve Doerner recommends it with simply roasted poultry and pan juices.
$19.95/bottle (12 pk. in the half bottles)

Chateau De Laubade Bas Armagnac XO (3 pack)
The brandy world may be ruled by the big Cognac producers Remy and Hine but the truth and inside money has always been on the smaller Armagnac producers of Gascony. Made in much smaller quantities usually by family owned concerns, Armagnac is the difference between mass factory production and Artisanal craftsmanship. the nose on this XO is intense with aromas of jasmine, candied fruit, vanilla and cinnamon. Round in texture, elegant and complex. A great winter sipper.
