The Good Juice
After conducting an at length survey around the Profile office (more of a water cooler conversation) we've come up with a list of white wines that will make your summer a breeze. Stash some of these away for the following months and you'll be all set for any occasion that the Ontario summer throws at you.

Fantinel Pinot Grigio 2008 $22.95
Marco Fantinel fashions some of northern Italy's most distinguished wines, he's a bit of a detail man you could say. This is a Pinot that has some unexpected oomph to it, we think that you will be surprised by the intensity of the wine. The nose offers up ripe quince, Asian pear, white pepper and fresh rain. It is the perfect match with Prosciutto and good olive oil.

Miner Family Viognier 2008 $21.95
You may not be in the mood for one of their big Napa Valley Cabernets when the thermometer hits 30 degrees, but the people at Miner have produced a simply stunning Viognier that begs for hot weather and a patio. Exotic tropical aromas instantly leap from the glass, pineapple, melon, orange and lemon oil. The mouthfeel is rich and voluptuous, it's a great match with simple grilled seafood.

Stag's Leap Wine Cellars Chardonnay 2008 $32.95
We've been lucky enough to secure some Chardonnay from this iconic winery for the first time this year. Stag's Leap Wine Cellars has been the attention of movies, books and countless articles over the years. It was the winery that beat the French at their own game back in the 70's. The Chardonnay is one of restraint over ripeness. Made in a style similar to Chablis, it displays crisp green apple, savoury herbs and has a fresh air about it. A delicate touch of French oak adds deft seasoning.

Robert Oatley Sauvignon Blanc 2009 $19.95
This is the retirement project of Robert Oatley, one of the godfathers of the Aussie wine business. Now in his eighties and still very much at the helm, he is producing wines of uncommon elegance and grace. The Sauvignon Blanc shows well with fresh cut flavours, McIntosh apple, gooseberries, asparagus and tomato leaf on the nose. A classic lean zesty mouthfeel make it a summer winner for the back deck.

Jackson Estate Sauvignon Blanc 2008 $20.95
Jackson Estate is one of New Zealand's blue blood wineries, fifth generational farmers with prime vineyard sights in Marlborough. Their Sauvignon is forward, uncompromisingly fresh and racy. The nose offers up a complex mixture of grass, a little truffle, fresh tomato and olives. The usual green and citrus flavours are all there but there is an extra dimension to this wine. Serve with tomato salads or Gazpacho.
