Bersano Gavi di Gavi 2008
Produced in the foggy hills of Piedmont, Northern Italy, Gavi is made from the Cortese grape, indigenous to the region. It has no oak to weigh it down and the wine exhibits classic fresh green fruit flavours along with a delicate nutty liquorice finish. Gavi is a “go to” wine for many Italian restaurants wanting a wine to pair with simple Italian summer dishes such as Caprese salad, grilled seafood and antipasti. Don’t hold onto this one; it’s for drinking this summer.

Cormons Pinot Grigio 2007
Sometimes all we need is a good glass of cold white wine with no pretensions other than slaking your thirst after a long day. For us, Cormons Pinot Grigio always fits the bill. The wine is intense and concentrated but light on its feet with aromas of ripe pear, lime peel and a slatey mineral nuance. Serve well chilled on the patio with Prosciutto and Semi hard cheeses.

Miner Chardonnay 2006
Almost a decade after Miner produced their first Chardonnay, putting them on the map, winemaker Gary Brookman is still turning out seriously delicious chardonnay. They manage to show off the ripe fruit of California while keeping it sleek on the palate. This is full bodied and lush with aromas of ripe pear, tropical fruit and butterscotch. Serve with the accompanying recipe for grilled pork tenderloin.

Fuse Cabernet Sauvignon 2006
Ray Signorello the man behind the Fuse has been making top class Cabernets at the Signorello estate for twenty years. Ray inspiration for Fuse came from Antinori’s Tuscan wine Guado al tasso, a blend of mostly cabernet with a little syrah. Sourced from 4 different top class vineyards throughout the valley the nose is full of deep, dark fruit, abundant baking spice, liquorice and sweet wood spice. Dry, full, soft, plush tannins, moderate acidity and a quite interesting earthy mineral floral character on the palate. Highly pleasant and ready to drink Napa wine at a very attractive price.

Castello di Querceto Chianti Classico Riserva 2005
Located in the heart of Chianti Classico, the estate dates back to the 16th century. Not surprisingly, Sangiovese dominates here and is farmed with only organic fertilisers and treatments. The riserva Chianti is tight and super clean, delivering crushed blackberry, prune, oak and slate on the nose and palate. Medium to full bodied, with firm, mineral-coated tannins and a long sturdy finish. Wait for this one.

Chateau Teyssier St. Emilion Grand Cru 2006
Jonathan Maltus, the man behind Chateau Teyssier, is a busy man: vineyards in the heart of the Barossa Valley for his colonial estate project, a new venture in Napa Valley and Chateau Teyssier in St Emilion -- where he’s producing, with the help of Chateau Cheval Blanc winemaker Gilles Pauquet, some of the region’s most profound wines. Here’s what the press had to say about the 06 Teyssier: “An outstanding success as well as a sleeper of the vintage.” Its dark ruby colour is accompanied by plenty of black fruit, liquorice, earth and spice characteristics.

Biff's Pork Tenderloin with Maple Cinnamon Glaze
Recipe
2 pieces of whole pork tenderloin
½ cup of kosher salt
½ cup of brown sugar
¼ cup of maple syrup
½ tsp of ground cinnamon
½ tsp of ground clove
½ tsp of ground all spice
½ tsp of ground black pepper
1 tbsp of chili paste
2 tbsp of extra virgin olive oil
Method
Combine all ingredients in a bowl to form a paste. Refrigerate for 30 minutes.
Generously rub pork with marinade. Wrap in plastic wrap and refrigerate for 4 hours.
Remove pork from fridge and brush off excess marinade.
Cook on a hot grill turning frequently for 16-18 minutes until pork is just above medium.
When pork is cooked remove from heat and allow to rest for 5 minutes before slicing.
Serve with Miner Chardonnay.
