The Good Juice

The warmer weather just can’t be that far around the corner so we have featured two white wines this week, the Miner Family Winery, 2007 Viognier along with the 2008 Crios Torrentes from Susana Balbo. The red wine that we have selected is the Cesari, 2005 Ripasso, Bosan which has been paired with duck breast, vincotto sauce and wild blueberry risotto from Zucca Trattoria. We will once again have these wines open and available for tasting from 9:00 am. to 4:30 pm. this Friday, April 3rd. Cesari Bosan Cesari, 2005 Ripasso Valpolicella, Classico, Bosan

The Valpolicella is the result of a blend of 80% Corvine Veronese and 20% Rondinella. The “Ripasso” technique has been historically used in Valpolicella, and can be summarized as the refermentation of vines of the same vintage or previous vintages on the fermented marc of grapes dried to produce Amarone. The Valpolicella which has undergone this process acquires colour, structure, aromas, tannins and around 1 to 1.5 percentage points in alcohol content compared to the original wine. The wine is matured in French oak casks for 12 months followed by assemblage in oak barrels for a further 6 months. Ageing is completed with at least another 8 months in bottles. The resulting wine possesses a predominantly cherry bouquet with pleasant hints of cocoa, tobacco and vanilla. It has an intense purple red colour with a soft and velvety finish.

Zucca Trattoria…duck breast with vincotto sauce,
wild blueberry risotto

duck breast
vincotto (reduced red grape must)
chicken or duck broth
carnaroli rice
shallots, finely minced
white wine
wild blueberries
unsalted butter
parmigiano

Method
Sear duck breast slowly skin-side down in a heavy pan to render the fat. Pour it off as it accumulates. Meanwhile bring the broth to a simmer and begin the risotto. Soften the shallots in a little duck fat, add the rice and stir briefly to toast the grains. Splash with white wine and when absorbed ladle in the hot broth a little at a time stirring continually. Add the blueberries a minute or two before the rice is cooked. Whip in the butter and parmigiano to finish. When the duck fat is fully rendered turn up the heat under the pan. Salt the breast and turn it fat-side up. Sear until rare. Remove to a board and cut into thick slices. Place in a dish and keep warm. Wipe out the pan with a paper towel. Reduce some vincotto and broth in the pan to make a sauce. Add any juices from the resting duck. Finish the sauce with a nut of butter. Mound the risotto onto warm plates. Fan the duck around and spoon over the sauce.

The Connoisseurs’ Guide, March 2nd, 2009 which awarded the Miner Viognier 92 points had the following to say…”Sweetly spiced peaches merge with touches of honey, anise and kiwi in the deep, impressively filled aromas of this well focused youngster, and the equally rich flavours that follow show lots of fruity substance and no let up in depth. Full-bodied and quite well balanced with Chardonnay-like richness and weight, it is a wine of considerable potential and should grow into better with a year or two of quiet time in your cellar. GOOD VALUE.”

The Wine Advocate, Dec. 08 gave the 2008 Torrentes 90 points. They had the following to say…”It offers up an alluring perfume of spring flowers, peach, apricot, and a hint of citrus. On the palate the wine is dry, smooth textured, layered and succulent while retaining a sense of elegance. This nicely balanced wine features a lengthy, fruit filled finish. Drink it over the next 1-2 years. Susana Balbo is also widely credited with developing the modern style of Torrentes; hers remains the benchmark.”
