The Good Juice

For this and following editions of The Good Juice we are going to try something a little different. We have gone out to the restaurants that we work with and have asked that they provide us with recipes specifically paired with our wines. Over the coming weeks we will provide you not only with tasting notes on our wines but also with the recipes that have been submitted to us by some of Toronto’s finest restaurants. This week we are featuring the Dominio Del Plata, 2006 Crios Cabernet Sauvignon with Black Currant Braised Bison Short Ribs from PORT Restaurant and a white wine from South Africa, the Winery of Good Hope, 2007 Chenin Blanc.

When I talk to people about wine especially a new wine, they often tell me that they are uncomfortable purchasing a case without first tasting the wine...who wouldn’t be? So what we are going to do is have these two wines open and available for tasting at our office from 9:00 am. to 4:30 pm. this Friday, March 20th. No more excuses, drop by when you have a minute and sample both the Crios, Cabernet Sauvignon along with the 2007 Chenin Blanc from Winery of Good Hope. Our office is at 156 Duncan Mill Road Unit 23 and is conveniently located at Leslie Street and the 401. Unfortunately we won’t have any of the Bison Short Ribs to go with the Cab, we’ll work on that.

Crios Cab Dominio Del Plata, 2007 Crios Cabernet Sauvignon $17.95/bottle

“ The 2007 Cabernet Sauvignon spent 9 months in one-year-old French and American oak and was bottled without fining or filtration. Purple-colored, it reveals an expressive perfume of cedar, spice box, black currant and black raspberry. This is followed by a medium to full-bodied wine with lots of savory black fruit, enough structure to evolve for 1-2 years, excellent balance, and a long, fruit-filled finish. Drink it over the next 3-4 years. The Crios de Susana Balbo label has rapidly become synonymous with great value. “

PORT Restaurant…Black Currant Braised Bison Short Ribs
2.5 lbs bison (or beef) short ribs
1 cup small diced celery
1 cup small diced carrots
1 cup small diced onion
½ cup roasted garlic
1 cup dry black currants
1 bunch of thyme
1 tsp cayenne pepper
Salt and pepper
1 can frozen grape juice
8 cups veal stock

Method
In a large braising pot over high heat dry sear carrots, onions, celery and garlic until they start to brown. Then add currants, thyme and grape juice reduce add cayenne pepper and veal stock. Stir until all incorporated, bring liquid up to room temperature then add bison short ribs. Cover, place in oven @ 300 degrees for 3.5 to 4 hours remove and let cool. Carefully remove short ribs. Take bunch of thyme out and blend all braising liquid then reduce by 3 times untill very thick. This reduction is your BBQ sauce when you’re ready to reheat your ribs brush with BBQ sauce and reheat.

Good Hope Winery of Good Hope, 2007 Chenin Blanc $15.50/bottle

2007 started as a blistering hot vintage, resulting in early picking at the end of January. The secret of the Chenin harvest this vintage was to ensure that the grapes did not become over-ripe, thus making alcohols too high and losing natural acidity and crispness in the completed wine. This was achieved through careful canopy management in the vineyards and elimination of any shriveled or sunburned grapes. Separate parcels were picked individually at varying ripeness, in order to build good complexity of acidity, fruit, depth and minerality.

Chenin is an extremely versatile grape, able to make excellent wines in many different guises, from late harvest to classic dry Chenin and even Méthode Champenoise. The 2007 from Winery of Good Hope is a wonderfully lively, fruity and beautifully balanced dry Chenin Blanc. With flavours of pears, sherbet and flint there is plenty of leesy mouthfeel and juicy fruit, with a refreshing mineral finish.

John Platter is arguably the Robert Parker of South African wines. Here is what he had to say about the 07’ Chenin in the John Platter Wine Guide, 2008 Edition…” Exceptionally drinkable and well priced. Crammed with palate-awakening crunchy pear freshness, 2007 is quaffability personified. “ The Wine Enthusiast, June 2008 rated the wine a Best Buy at 88 points and had the following to say…” Pretty, balanced and elegant, this wine offers varietally correct aromas and flavors of citrus, melon and apple, all buoyed by a crisp minerality that offers lift. Also true to the style, there’s a round sweetness here that gives the wine an opulent edge. “
