Cypress Vineyards wines have a bold new appeal! The creative team of talented Australian veteran winemaker Philip Shaw of Rosemount fame, his son Daniel Shaw, red winemaker for J. Lohr and Jeff Meier, winemaker for J. Lohr, has embarked on a new winemaking direction for Cypress Vineyards. Viticulturally, that means harvesting at the peak of bright fruit flavor development, irrespective of maturity. Fermentation and aging occur in stainless steel to preserve every ounce of fruit intensity. At blending time, a good deal of "mucking around" with the wine brings the trio's vision to fruition - intense fruit aromas and flavors. Finally, the wines are sealed with the modern new Stelvin® closure to ensure that the bright fruit flavors and aromas are preserved "untainted" in each and every bottle.

Cypress Chardonnay, 2005 California

For grape growing, the ocean’s influence is significant, keeping coastal and inland valleys refreshingly cool preserving the grape’s natural acidity.  In the case of Cypress Vineyards Chardonnay that cool Pacific Ocean air moves directly from Monterey Bay down the Monterey appellations of the Salinas Valley each and every day, creating richly flavored Chardonnay fruit with grapefruit and other citrus flavors paired with peach and even tropical character. Harvested and pressed in the vineyard at night, the Chardonnay is kept cold throughout its winemaking life, ensuring the preservation of the bright fruit flavors and acidity naturally created. Cypress Vineyards Chardonnay is a youthful, pale yellow in color with enticing fruit aromas of pear and peach, with citrus and tropical notes. It has lively fruit flavors of grapefruit, nectarine and pear with underlying vanilla spice.    

The Food and Wine Match
The refreshing acidity and solid palate intensity combined with the bright fruit aromas and flavors make the Cypress, 2005 Chardonnay an ideal accompaniment to grilled chicken or seafood. We have decided to pair this wine with Scallop and Smoked Salmon Cakes with Remoulade. The sweet succulence of these luscious seafood cakes combines with the creamy texture of the remoulade for a perfect match with the Chardonnay. As a good friend of mine would say, its yummy!

Minimum Orders: There is a one case minimum order (12 bottles unless otherwise noted).

Delivery to a single destination within the Greater Toronto Area (GTA) is free of charge. Delivery outside of the GTA can be arranged.
